The Best Eggplant Recipe

I don’t want to be biased but this is the best way to eat eggplant! But seriously this is SOOO GOOD! And what is even better is the dressing you use for this recipe goes amazing with pretty much all veggies! Hope you enjoy!!

Roasted Eggplant (print hereĀ )

Ingredients:

1 medium eggplant sliced with skin on

For the dressing

¼ cup olive oil

2 tbsp. lemon juice

Zest of one lemon

½ tbsp. oregano

1 tsp. dried parsley

2 cloves of minced garlic

Sea salt and black pepper to taste

Directions:

  1. Preheat oven to 400 degrees
  2. Combine all ingredients for the dressing
  3. Toss eggplant with dressing and place on a parchment lined baking sheet
  4. Roast for 20-25 minutes in oven, turning the slices halfway through

Roasted Carrots

Roasting vegetables is really easy and makes them taste sooo AMAZING! In this recipe were using turmeric and we even added in black pepper to help our bodies absorb all that goodness.

*Also we used the carrot tops to make pesto! No wasting here

Roasted Turmeric CarrotsĀ 

Ingredients:

12 carrots

2 tbsp olive oil

1 tsp turmeric

¼ tsp ground black pepper

Sprinkle of salt and parsley flakes

Directions:

  1. Preheat oven to 400 degrees
  2. Toss the carrots in the oil, turmeric and ground pepper.
  3. Sprinkle with salt and dried parsley flakes
  4. Roast for 20-30 minutes or until tender
