Ginger Encrusted Salmon

June has finally brought some sunny, summer weather!! This is my favorite time of year for sure☀️ Now salmon on the other hand is not one of my favorites (too fishy😬) BUT it’s delicious when you buy high quality salmon and add some flavors like ginger and lime!! Try it out if your not a fish lover like me and let me know what you think!

Ginger Encrusted Salmon


1 garlic clove, minced

1 tbsp ginger, grated

Zest of one lime

2 tbsp soy sauce

1 cup coarse almond flour (or almonds blended finely)

6 pieces of salmon

1 tbsp toasted sesame oil

1 lime, cut into quarters


1. Preheat oven to 350F

2. Add the garlic, ginger, lime zest, and soy sauce to a bowl

3. Add almond flour and mix until a paste is formed

4. Pat the salmon dry with a paper towel and lay skin flat onto a pan. Rub the flesh with sesame oil

5. Spread the paste on all the pieces evenly and place in the oven for 10-15 minutes. The salmon is done when it’s flesh flakes easily with fork. Serve with lime juice on top!
