Pear & Apple Cake

So this recipe took me three tries but we did enjoy eating all of them😆 The Lebanese in me makes me LOVE tahini! It’s definitely a unique flavor and it makes this cake-like thing (good description, right?😬) so GOOD😍

Pear Cake

4 dates

1 small green apple, chopped (could use a pear)

1/2 cup tahini

1/4 cup arrowroot flour*

1 tsp. baking soda

1 large pear, ripe, thinly sliced

1. Preheat oven to 350F

2. Add the dates and green apple to a blender. Blend until small chunks

3. Add tahini and pulse until fully incorporated and the mixture becomes slightly fluffy

4. With a spoon, mix in the tapioca flour and baking soda

5. Grease an 8×8 dish with ghee or coconut oil. Pour mixture into pan evenly. Place in the oven for 15-20 minutes

6. Place the sliced pear on top, slightly press the slices into the cake

7. Put back in the oven for 20 minutes so the pears can cook. Use a toothpick to see if the cake is done before taking out

*could sub with tapioca starch or cornstarch
