Roasted Okra

 I think okra is one of the most underrated vegetables!! It is one of my favorites and if you’ve never tried it, this recipe is an easy way to make it delicious! Enjoy

Roasted Okra

Ingredients:

1 pound okra
2 tbsp. olive oil
1 tsp. curry powder
1/4 tsp. turmeric
1/4 tsp. granulated garlic powder
1/4 tsp. ginger powder
Salt to taste
lemon juice

Directions:

  1. Preheat oven to 425F
  2. Cut stem off the okra and chop into chunks (can also leave them whole which I prefer)
  3. In a medium sized bowl, add the okra and all other ingredients besides lemon juice. Toss to coat
  4. Place in oven for 30-35 minutes or until browned
  5. Squeeze lemon juice on top and serve
