Savory Oatcakes

Ever heard of savory oatmeal? Yea it’s a thing. I’m not a huge fan of just eating oatmeal (it’s WAY too sticky) BUT I love oatmeal pancakes so I decided to make savory oatcakes! Because obviously you need something else to top with avocado 🥑😆 If you are lucky enough to have another snow day tomorrow try these out❤️

Savory Oatcakes

2 cups oatmeal

1 cup milk of choice or water

1/2 cup yogurt

2 tbsp goat cheese (or shredded mozzarella)

1/2 tbsp maple syrup

1 egg

1/2 tsp salt

1/4 tsp cinnamon

2 tbsp. fresh parsley (or pretty much any green), chopped

1/4 tsp baking soda

Splash of milk

Toppings: avocado, tomatoes, pesto, fried egg, sausage, pretty much anything

Directions:

1. Blend 1 cup of oatmeal into flour

2. Add the oat flour and regular oatmeal to a medium sized bowl

3. Add water/milk, yogurt, goat cheese, maple syrup, egg, salt and cinnamon and mix well

4. Preheat griddle

5. Add chopped parsley and baking soda to mix. Might need to add a splash of milk

6. Using either butter, ghee or coconut oil drizzle onto griddle. Pour batter into even circles

7. Cook for 3-5 minutes on each side (or until brown)

8. Serve with all your favorite toppings!
