Lemon Poppy Seed Cookies

The best way to feel happy in the winter is to go some place warm (wouldn’t that be nice☀️😬) or just make these summer inspired cookies! They are lemony and just the best!

Lemon Poppy Seed Breakfast Cookies

Ingredients:

1 1/2 cups almond flour

1/2 cup gluten free flour

3/4 cup applesauce*

1 1/2 tbsp. lemon zest

3-4 tbsp lemon juice

1/4 cup maple syrup

2 tbsp poppy seeds

1/4 tsp. Baking soda

Directions:

1. Preheat over to 350F

2. Combine the almond flour and gluten free flour together in a medium sized bowl

3. Stir together the applesauce, lemon zest, lemon juice and maple syrup

4. Add to the dry ingredients and stir to combine, add the poppy seeds and baking soda and stir

5. Plop the cookies onto a lined baking sheet using a spoon. Press down slightly with your fingers

6. Bake in the oven for 15 minutes. Let sit for 5 minutes before transferring to a storage container

Notes: these are actually better the next day! If storing for long place in the fridge

*for a fluffier texture use 1/2 cup of applesauce and one egg
