Happy Birthday Mom!

My beautiful mom turns a year older today🥳 Yup she was born two days before Christmas so it means more celebrating for us!! My mom really likes the raw desserts I make so I made a special one just for her! And it would also be great for Christmas and New Years if you are looking for something a little less sweet! Hope you enjoy the holidays❤️

Birthday Candy

Ingredients:

2 cups walnuts, whole

6 dates

¼ cup buckwheat groats*

¼ tsp. salt

½ tsp. cinnamon

Top layer

½ cup cacao butter, melted**

1/4 cup cacao powder

2-3 tbsp. honey

Pinch of salt

Directions:

  1. In a food processor, blend walnuts until they begin to clump together. Set aside
  2. Add dates to the food processor and blend until it forms a ball. Add the dates to the walnuts with the salt and cinnamon and mix to combine
  3. Stir in the buckwheat groats and pat evenly into a 8×8 dish
  4. Stir the top layer together and spread evenly onto the walnut mixture
  5. Place in the fridge to set for 30 minutes to one hour. Cut into squares (I made 25 small squares). Can be stored in the fridge or freezer

*I used the buckwheat cereal from Bob’s Red Mill so they buckwheat groats are actually blended into smaller pieces. If using whole groats, I would blend into smaller pieces before you put them into the mixture

**Could sub for coconut oil but measurements might be different, start with ¼ cup coconut oil
