Lentil Patties

Well hey therešŸ‘‹šŸ¼ hope your holiday season has been going great! This semester is finally over and there’s only one more to go!!! I loaded this recipe up with lentils, celery, onion, spinach and parsley. It’s kinda a mix between an Indian and Middle Eastern lentil patty. It goes great with avocado and hummus all wrapped up in a pita or lettuce leaf!

Curried Lentil Patties

Ingredients:

1 cup lentils

1/2 tbsp ghee or other oil

1 small onion, diced

3 celery, chopped

1/2 tsp garam masala (Indian spice)

1/2 tsp curry

1/4 tsp turmeric

1/4 tsp black pepper

1/4 tsp chili powder (more if you want it spicy, taste first)

Salt to taste

Parsley

2 handfuls spinach, sliced thin

1/4 cup arrowroot powder

Directions:

1. Cook the lentils according to the package

2. While cooking, add 1/2 tbsp oil of choice to a saucepan. SautƩ the onion and celery until browned and cooked through

3. Add the onion and celery to a food processor, along with the spices and fresh parsley. Blend well

4. Preheat oven to 400F

5. Strain the lentils and add about 3/4 of them to the blender. Pulse about 5 times (you want the lentils to be in pieces not a mushy paste)

6. Add the rest of the lentils, spinach and arrowroot powder and stir together

7. Add ghee (or other oil) to a baking sheet. Using a spoon, scoop the mixture onto the baking sheet. Should get about 20-24 patties

8. Bake for 10-15 minutes then flip

9. Bake for another 10 minutes until browned
