Going Bananas

I’ve been wanting to post this recipe for almost 2 weeks😅 Getting into rhythm of school, work and volunteering has been a challenge but I think it’s starting to get better! Here’s a fall inspired banana bread!! If fall did not lead to winter than I would actually like it because fall flavors are delicious! But since it does lead to winter I’m over here crying. The only thing that gets me through these cold months is baking with warm spices and flavors. Since banana bread is such staple I decided to revamp it with some warm spices like cinnamon and nutmeg. And if you add dates you have a delicious, caramel-y treat!!

Fall Inspired Banana Bread

Ingredients:

3 ripe bananas

1/3 cup almond butter

1 cup almond flour

1/3 cup tapioca flour

1/4 cup flax meal (ground flaxseeds)

4 large dates, cut into small pieces

2 tsp. cinnamon

1/2 tsp. nutmeg

dash of salt

1 tbsp. baking powder

Directions:

  1. Preheat oven to 350F
  2. Mash bananas in a bowl, then add almond butter and stir
  3. In a separate bowl combine almond flour, tapioca flour, flax meal, cinnamon, nutmeg and salt
  4. Add the flour mixture into the banana mixture and stir
  5. Add chopped dates, make sure they don’t clump into one ball. Then add baking powder
  6. Grease a loaf pan with ghee, pour mixture into pan and spread evenly.
  7. Bake in oven for 35-40 minutes. Let cool for 20 minutes before cutting
