Even though summer is coming to a close you can still grab a taste of it with strawberry shortcake!🍓 Its a pretty memorable dish for me that has been made during summer for pretty much my whole life. This recipes resembles more of a pound cake and tastes slightly like cornbread even though theres no cornmeal whatsoever🤷🏻♀️ This would be perfect for Labor Day!!!
Strawberry Shortcake🍓🍓
Ingredients:
Strawberries-
1 pound strawberries, washed and cut into fours
2 tsp. organic sugar or coconut sugar
Cake-
1 cup gluten free flour
¾ cup almond flour
¾ cup milk of choice
¼ cup honey
Dash of salt
¼ tsp. baking soda
Directions:
- Place strawberries and sugar into a bowl, mix to combine then set aside
- Preheat oven to 375F
- For the cake, combine the gluten free flour with the almond flour. Add the milk and honey and stir well. Add salt and baking soda last and mix
- Grease an 8×8 dish with ghee. Pour mixture into dish and spread evenly with spoon
- Bake for 20 minutes or until golden brown and done in the center. Let cool for 10 minutes
- Cut into squares and serve with strawberries on top and homemade whipped cream
