A litte taste of summer

Even though summer is coming to a close you can still grab a taste of it with strawberry shortcake!🍓 Its a pretty memorable dish for me that has been made during summer for pretty much my whole life. This recipes resembles more of a pound cake and tastes slightly like cornbread even though theres no cornmeal whatsoever🤷🏻‍♀️ This would be perfect for Labor Day!!!

Strawberry Shortcake🍓🍓



1 pound strawberries, washed and cut into fours

2 tsp. organic sugar or coconut sugar


1 cup gluten free flour

¾ cup almond flour

¾ cup milk of choice

¼ cup honey

Dash of salt

¼ tsp. baking soda



  1. Place strawberries and sugar into a bowl, mix to combine then set aside
  2. Preheat oven to 375F
  3. For the cake, combine the gluten free flour with the almond flour. Add the milk and honey and stir well. Add salt and baking soda last and mix
  4. Grease an 8×8 dish with ghee. Pour mixture into dish and spread evenly with spoon
  5. Bake for 20 minutes or until golden brown and done in the center. Let cool for 10 minutes
  6. Cut into squares and serve with strawberries on top and homemade whipped cream
