Zucchini in every meal

The past week it seems we’ve been eating zucchini in every meal…. good thing it’s super versatile! These muffins can be a dessert or breakfast on the go!

Blueberry Goat Cheese Zucchini Muffins

Ingredients: 

1 cup buckwheat groats

1/4 cup arrowroot flour 

1 tsp cinnamon

3/4 cup milk

1 cup zucchini, shredded 

2-4 tbsp honey/maple syrup, preference 

1 cup blueberries (fresh or frozen)

1/2 cup goat cheese 

1/4 tsp baking soda 

Directions:

  1. Preheat oven to 350F
  2. Grind buckwheat groats into a fine flour 
  3. Add to a medium sized bowl along with the arrowroot powder, cinnamon and baking soda, stir
  4. Add the milk and mix well to combine then add shredded zucchini, honey and blueberries and mix again
  5. Crumble the goat cheese and lightly mix into batter (you could also save some for the top of the muffins) 
  6. Pour evenly into muffin tins with liners and place in the oven for 25-30 min
