Zucchini Soup

If you have a garden you are probably getting a lot of zucchini right now… Good thing there is like a million ways to eat it!! And making it into a refreshing summer soup is definitely one! Kinda like gazpacho but with zucchini🥒

Chilled Zucchini Lemon Mint Soup

Ingredients:

½ tbsp. ghee

2 cloves garlic

½ onion, chopped

2 zucchinis, chopped

2 cups chicken broth

2 tbsp. fresh mint

½ lemon, juiced

1 tsp. salt

¼ tsp. pepper

 

Directions:

  1. Melt ghee, add garlic and cook until you can smell it. Add onions and continue to cook until translucent
  2. Add the zucchinis and chicken broth and bring to a boil, then let simmer until zucchini is tender. Add the fresh mint right at the end
  3. Pour into a blender or use an immersion blender. Add the lemon juice, salt and pepper. Blend until completely smooth
  4. You can eat it warm or you can place it in the fridge for 2-5 hours until cold. Serve with fresh olive oil and lemon zest on top
