If you have a garden you are probably getting a lot of zucchini right now… Good thing there is like a million ways to eat it!! And making it into a refreshing summer soup is definitely one! Kinda like gazpacho but with zucchini🥒
Chilled Zucchini Lemon Mint Soup
Ingredients:
½ tbsp. ghee
2 cloves garlic
½ onion, chopped
2 zucchinis, chopped
2 cups chicken broth
2 tbsp. fresh mint
½ lemon, juiced
1 tsp. salt
¼ tsp. pepper
Directions:
- Melt ghee, add garlic and cook until you can smell it. Add onions and continue to cook until translucent
- Add the zucchinis and chicken broth and bring to a boil, then let simmer until zucchini is tender. Add the fresh mint right at the end
- Pour into a blender or use an immersion blender. Add the lemon juice, salt and pepper. Blend until completely smooth
- You can eat it warm or you can place it in the fridge for 2-5 hours until cold. Serve with fresh olive oil and lemon zest on top
