I grew up eating no-bake cookies and they were always one of my favorites because they were really easy to make and I could make them myself. In this recipe I decided to use good ol’ trusty dates as the sweetener because I just love dates, and they turned out so good! I made my whole family try them and they were a hit!! And since they are no-bake you don’t have to heat up your house using the oven!
No-Bakes
Ingredients:
1/4 cup butter or coconut oil
1/4 cup cacao powder*
10 dates, blended with only enough water for them to blend smoothly
3 heaping tbsp. peanut butter
1 1/4 cup oatmeal
pinch of salt
Directions:
- In a saucepan, heat the butter until melted. Add the cacao powder, stir and heat until simmering.
- Turn off the heat and add the dates and peanut butter. Stir well.
- Add oatmeal, stir, plop the mixture onto a parchment lined pan and form into circles with your hands
- Place the pan in the fridge for at least 30 minutes to set. Store in fridge
*If you want it less chocolatey/fudgey use 2 tablespoons instead of 1/4 cup
