No-Bakes

I grew up eating no-bake cookies and they were always one of my favorites because they were really easy to make and I could make them myself. In this recipe I decided to use good ol’ trusty dates as the sweetener because I just love dates, and they turned out so good! I made my whole family try them and they were a hit!! And since they are no-bake you don’t have to heat up your house using the oven!

No-Bakes

Ingredients:

1/4 cup butter or coconut oil

1/4 cup cacao powder*

10 dates, blended with only enough water for them to blend smoothly

3 heaping tbsp. peanut butter

1 1/4 cup oatmeal

pinch of salt

Directions:

  1. In a saucepan, heat the butter until melted. Add the cacao powder, stir and heat until simmering.
  2. Turn off the heat and add the dates and peanut butter. Stir well.
  3. Add oatmeal, stir, plop the mixture onto a parchment lined pan and form into circles with your hands
  4. Place the pan in the fridge for at least 30 minutes to set. Store in fridge

*If you want it less chocolatey/fudgey use 2 tablespoons instead of 1/4 cup
