Warm weather calls for…

It’s gonna be over 90 degrees this weekend, and in MI that’s HOT! Glad I made some of these popsicles to stay cool and refreshed!! Using fresh herbs straight from the garden too!

Mint & Lime Popsicles 

makes 6


¼ cup mint, loosely packed

2 cups water

1 lime, juiced

1 tsp gelatin

1 tbsp honey 

Hot water


  1. In a blender, combine the mint, water and lime and blend until mint is finely chopped.  If you don’t want mint pieces in your popsicles pour the mixture through a strainer
  2. Pour half the mixture into a large measuring cup with a spout.  Sprinkle the gelatin over the top to hydrate it
  3. Heat water (probably like 1/3 cup), dissolve the honey in the warm water than pour this into the measuring cup to dissolve the gelatin. Add the rest of the lime/mint mixture and stir well
  4. Pour into popsicle molds and freeze overnight
