Tahini Bars

Happy first weekend of June!! Summer is here and all I want to eat is fresh berries. There is nothing like in-season berries. So I made something with them and it turned out so good!! Its kinda like a tahini cookie bottom with a blueberry jelly on top! You should probably make it right now 🙂

Blueberry Tahini Bars

Ingredients:

½ cup tahini

1 cup dates (6 large dates, loosely packed)

¼ cup arrowroot powder

¼ cup water

Chia egg

½ tsp. baking soda

2 cups frozen blueberries

1 ½ tbsp. arrowroot

1 tsp. vanilla extract

Directions:

  1. Preheat oven to 350F
  2. In a food processor, add the dates and pulse until a ball is formed
  3. Add tahini, arrowroot powder, water and chia egg. Blend until smooth
  4. Pour mixture into an 8×8 glass dish and bake for 20-25 minutes or until golden brown and toothpick comes out clean
  5. When that is done and out of the oven, let it sit for at least 10 minutes. While that’s cooling add the blueberries to a saucepan. Cook on medium until the natural juices start coming out
  6. Add the arrowroot powder and stir well
  7. When it starts to get thick remove from the heat and add the vanilla extract.
  8. Add the blueberry mixture to the top
  9. Let set at least one hour then cut into bars. Store in the fridge
