Happy first weekend of June!! Summer is here and all I want to eat is fresh berries. There is nothing like in-season berries. So I made something with them and it turned out so good!! Its kinda like a tahini cookie bottom with a blueberry jelly on top! You should probably make it right now 🙂
Blueberry Tahini Bars
Ingredients:
½ cup tahini
1 cup dates (6 large dates, loosely packed)
¼ cup arrowroot powder
¼ cup water
Chia egg
½ tsp. baking soda
2 cups frozen blueberries
1 ½ tbsp. arrowroot
1 tsp. vanilla extract
Directions:
- Preheat oven to 350F
- In a food processor, add the dates and pulse until a ball is formed
- Add tahini, arrowroot powder, water and chia egg. Blend until smooth
- Pour mixture into an 8×8 glass dish and bake for 20-25 minutes or until golden brown and toothpick comes out clean
- When that is done and out of the oven, let it sit for at least 10 minutes. While that’s cooling add the blueberries to a saucepan. Cook on medium until the natural juices start coming out
- Add the arrowroot powder and stir well
- When it starts to get thick remove from the heat and add the vanilla extract.
- Add the blueberry mixture to the top
- Let set at least one hour then cut into bars. Store in the fridge
