Frozen Lemonade Bars

It has been getting really hot lately☀️ Which I love and I also love eating foods that cool you down! That’s why I created these frozen lemonade bars! These are super refreshing and  just the perfect about of sweetness! They are made with 100% real food ingredients too!!

Frozen Strawberry Lemonade Bars

Ingredients:

Crust-

1  cup dates (6 large dates)

½ cup cashews (can use any nut/seed)

Dash of salt

1 tsp. vanilla extract

 

Top-

¼ cup water

¼ cup tapioca flour

1 cup almond milk

2 tbsp lemon zest

1 tbsp. lemon juice

10-12 strawberries

 

Directions:

  1. In a food processor, add the dates. Pulse a few times then add the cashews, salt and vanilla. Pulse until the mixture forms a ball (may need to stop and scrape sides)
  2. Line an 8×8 pan with parchment paper and spread the date mixture into an even layer. I wetted my hands to keep it from sticking
  3. Add the tapioca flour and ¼ cup water together and stir to combine
  4. In a medium saucepan, add the milk and tapioca mixture. Cook on medium, whisking frequently. This will become thick fast so keep your eye on it
  5. While that’s cooking add the strawberries, lemon juice and lemon zest to the same food processor (no need to clean it, a little date mixture won’t hurt anything). Blend until liquid-y
  6. Once the milk mixture has thickened remove from heat. Add the strawberry mixture and stir well. Then add this to the top of the dates
  7. Place in the freezer for 2 hours. Let sit out for 5 minutes and cut into bars. Store in the freezer
