Granola Bars

Granola bars are good but most of the packaged ones have funky ingredients and lots of added sugar. This recipe shows how easy it is to make your own! And perfect for making ahead, make them today and have them for the whole week🎉  I eat them for breakfast or with my lunch👌🏼

Buckwheat Bars

1 cup buckwheat (could probably use oats instead, maybe less though)

1/3 cup peanut butter

1 banana

1 tbsp pumpkin seeds

1 tbsp sunflower seeds

1/2 tsp cinnamon

1/4 tsp salt

Directions:

  1. Add buckwheat groats to a food processor. Pulse a few times until there are no large groats left
  2. Add the banana and peanut butter to the processor and pulse a few more times
  3. Stir in the pumpkin seeds, sunflower seeds, cinnamon and salt
  4. Add the mixture to a parchment lined loaf pan. Spread evenly, then let harden in the fridge for one hour
  5. Cut them into bars and store in fridge
