I really like mushrooms. But these stuffed mushrooms bring my love to the next level!!🎉 It’s pretty much mushrooms stuffed with a creamy spinach dip and it is delicious! I made them in the oven but these can totally be grilled so they are perfect for summer! I used the baby portabellas but normal ones would work good too just might need to make more of the filling👌🏼
Ingredients:
1/2 cup tahini sauce (find the recipe here)
2 handfuls spinach
1/4 tsp salt
1/4 tsp pepper
2 tbsp nutritional yeast
5 baby portabella mushrooms
Directions:
- Place the tahini sauce in a medium sized bowl
- Chop spinach finely and add it to the bowl along with salt, pepper and nutritional yeast. Stir well
- Preheat oven to 350
- Wash and remove the stems of the portabella mushrooms. Chop the stems finely and add it to the bowl then stir to incorporate
- Place mushrooms on a parchment lined pan with the tops facing down. Equally distribute the tahini mixture into each one until the mixture is gone
- Place into the oven for 25 minutes or until the mushrooms are cooked through
