Stuffed Mushrooms

I really like mushrooms. But these stuffed mushrooms bring my love to the next level!!🎉 It’s pretty much mushrooms stuffed with a creamy spinach dip and it is delicious! I made them in the oven but these can totally be grilled so they are perfect for summer! I used the baby portabellas but normal ones would work good too just might need to make more of the filling👌🏼


1/2 cup tahini sauce (find the recipe here)

2 handfuls spinach

1/4 tsp salt

1/4 tsp pepper

2 tbsp nutritional yeast

5 baby portabella mushrooms 


  1. Place the tahini sauce in a medium sized bowl
  2. Chop spinach finely and add it to the bowl along with salt, pepper and nutritional yeast. Stir well
  3. Preheat oven to 350
  4. Wash and remove the stems of the portabella mushrooms. Chop the stems finely and add it to the bowl then stir to incorporate
  5. Place mushrooms on a parchment lined pan with the tops facing down. Equally distribute the tahini mixture into each one until the mixture is gone
  6. Place into the oven for 25 minutes or until the mushrooms are cooked through
