(Bae)nana Bread!

There’s nothing better than some homemade banana bread, righhttt🙋🏻‍♀️ And this totally gluten free banana bread is so good!! I’m really glad I had some time between studying to whip it up and share it🙌🏼 And it’s only sweetened with fruit so I don’t think there’s an excuse to NOT make it🎉

Tahini & Blackberry Banana Bread

Ingredients:

3 ripe bananas

1/3 cup tahini

1 ½ cup almond flour

½ cup tapioca flour

½ cup blackberries, whole

1 tsp baking soda

1 tbsp lemon juice

1/4 tsp salt

 

Directions:

  1. Preheat oven to 350
  2. In a large bowl, mash the bananas, then add tahini and mix well
  3. Add the almond and tapioca flour to the bowl, stir just enough to combine (may need 1-2 tbsp of milk of choice or water)
  4. Chop the blackberries as small or large as you want (the larger though might sink to the bottom). Add to batter along with the lemon juice, baking soda and salt
  5. Pour into a greased loaf pan
  6. Place into the oven for 40-50 minutes or until browned and a toothpick comes out clean
