“Ranch”

Happy Wednesday! I am very close to being done hah!! So I used to love ranch dressing (mostly on my pizza, duh😝) But now I could care less about it (actually I could care less about A LOT of food I used to eat😏). BUT you guys! This “ranch” is a new favorite and is definitely a good substitute if you were a ranch person too. There are also many paleo ranch dressings that you can buy but I don’t do well with eggs so that is not an option for me. Thanks to my mom for creating this egg and dairy free ranch dressing!!!😍

Egg and Dairy Free “Ranch”

Ingredients:

1 cup cashews, soak in water with 1 tablespoon lemon juice for 1-4 hours

½ cup fresh herbs (can do mint, parsley or cilantro)

1 tbsp. lemon juice

½ tsp. lemon zest

1 tsp. garlic powder

1 tsp. onion powder

¼ tsp. pepper

½ tsp. salt

1 cup water

 

Directions:

  1. Rinse cashews after soaking
  2. Place all ingredients into food processor, pulse until smooth. May need to add more water to get the consistency you’re looking for
