Heyyy! Can I just say how much I love my parents. I am pretty positive that I would have nothing to eat if I lived on my own. Seriously they are just the BEST! So shoutout to them and we have a recipe for you today!!!!!! Thanks to mom, she used the okra in a dish that is similar to a traditional Lebanese dish and it was delicious of course. If you haven’t tried okra before I say you should give it a shot in this recipe. Hopefully there will be more recipes coming soon 🙂
Okra and Rice (Okra Stew)
Ingredients:
2 lbs. beef stew meat
Ghee for the pan
2 lbs. okra – washed and trimmed ends (don’t cut into the pod, we are using them whole)
1 large onion, diced
3 cloves garlic, minced
6oz can tomato paste
2 cups water
1 tsp. salt
1 tsp. syrain pepper
1 tsp. ground coriander
28oz can crushed tomatoes
Directions:
- Brown meat in ghee in batches, set aside. After all meat is browned place back into pan (dutch oven is recommended).
- Add onions and cook until translucent
- Add garlic, spices and tomato paste. Stir to coat meat then add water and stir all together
- Cover and let simmer until meat is tender. Approximately 1½ hours
- As that cooks, make sure the okra is completely dry on the outside. Brown okra on all sides using ghee. Once meat is done, add the crushed tomatoes and okra and mix
- Simmer for 10 minutes and serve. We ate this with rice but feel free to eat it with what you prefer
