Strawberry Cookies

Happy Friday🎉🎉 School has been very draining lately which is kinda funny because I’m going to school for nutrition but it’s taking away from sharing nutrition tips and recipes with you guys🙄 But this semester is almost over!!! (Still like a month but soooo close ha!) Anyway hope you enjoy this super yummy cookie recipe (because baking cookies is fun☺️)

Strawberry Banana Cookies


1 cup freeze dried strawberries

2 bananas

½ cup tapioca starch

1½ cups almond flour

1 tsp. lemon juice

¼ tsp. salt

1 tbsp. almond milk

4-5 large strawberries, copped small

½ tsp. baking soda


1. Preheat oven to 350F

2. Add the freeze dried strawberries to a food processor and blend until powdery, set aside

3. Add the bananas to a medium sized bowl and mash, then add almond flour and tapioca flour and mix well

4. Add the strawberry powder, lemon juice, salt and stir. Add milk if needed

5. Add the fresh strawberries and the baking soda

6. Plop the batter onto a parchment lined pan, should make 16 cookies. (Add chocolate chips if wanted!) Bake in the oven for 15 minutes or until slightly browned on the sides

7. ✋🏼Do not even think about moving these off the pan until the are completely cool or they will break apart!!! Enjoy!
