Heyy it’s Friday!! I kinda feel like I was so busy this week that I don’t even remember what happened… But somehow we made it to Friday and I got a great recipe for you today!! Scones🎉 On spring break I might have eaten a scone as my post workout snack😂 And I kinda missed them so I made some of course!! These ones definitely have a lot less sugar though so that’s always good right?!
Rosemary Lemon Scones
¾ cup gluten free flour
½ cup almond flour
1 ½ tsp. rosemary, dried
1 tbsp. lemon juice
1 tsp. lemon zest
1 tbsp. ghee
2 tbsp. – ¼ cup water or milk
2 tbsp. honey*
- Preheat oven to 375F
- In a medium sized bowl, mix together the gluten free flour and the almond flour. Add the rosemary and baking soda and mix well
- Next add the lemon zest, lemon juice, ghee, 2 tablespoons of the milk and the honey. Stir to combine. If the mixture is too dry add more milk.
- On a parchment lined pan, form a circle and gently cut into 6 wedges.
- Bake for 20-25 minutes until slightly brown on top
*you can use more honey if you want it sweeter but I would suggest not using as much milk so that the mixture isn’t too wet
We ate ours with a little drizzle of honey on top and they were delicious!!
