Oh the Monday after spring break and day light savings time… I’m sleepy. But I know we can all make it through today!! 😬 These are made from nuts, some caffeine (thanks to the matcha) and fruit and man are they tasty👌🏼 Oh and this flavor combo was inspired by an ice cream sandwich I had last week😂
Matcha Strawberry Cashew Balls
Ingredients:
1 cup cashews
2 tsp. matcha powder
1 tbsp. milk of choice
small handful of freeze dried strawberries
¼ tsp. salt
Directions:
- In a food processor, pulse cashews until powder is formed
- Add the matcha and salt and pulse until the mixture can hold together but is still crumbly.
- Add the milk and stir, the mixture should be able to hold its shape (add more milk if needed)
- Crush the small handful of strawberries over the mixture and stir until incorporated
- Form into 11-14 balls. Put on a tray and place in fridge for 30 minutes to firm. Place in container and store in fridge
