Can you believe its already Feb 14th!! This year is happening so fast! And since it’s that special LOVE holiday I had to make purple, heart shaped cookies right?! The purple comes from a purple sweet potato and these are only 4 ingredients!!! I used Pure7 Chocolate for the chocolate chunks, they only use honey to sweeten their chocolate… amazing right!!!!! You can find the one I used here and they have so many other flavors that look delicious. Hope you have a wonderful Valentines Day! I will be celebrating by eating chocolate 😬

Heart Shaped Cookies

Makes 8-10 cookies

INGREDIENTS:

1 cup sweet potato, purple or white

¼ cup tahini (or other nut/seed butter)

1-2 tbsp. honey

2 tbsp. chocolate chips or 1/2 bar of chocolate chopped

DIRECTIONS:

1. Cook the sweet potato for 45 min to an hour or until soft
2. Preheat oven to 350F
3. Mash the potato up with the tahini and honey and mix well
4. Fold in the chocolate chips
5. Scoop out some of the dough and form it into little hearts or just circles and place on a parchment lined pan
6. Cook for 12-14 minutes. Let cool completely before trying to remove from the pan or they will fall apart!
