Chickpeas

Happy Thursday!! It feels like a Tuesday for me but I’m glad it’s Thursday!!! Today I have a quick snack recipe that is perfect for in the go and to pack in lunches! I know you can buy roasted chickpeas but I haven’t found one that uses an oil I 100% like so I made my own😬 They are actually quite easy to make and very customizable👌🏼

Roasted Chickpeas

Ingredients:

1 cup chickpeas, soaked in four cups of water overnight (about 2 cups after soaked)

1 tbsp. ghee or coconut oil

1/4 tsp. paprika

1 tsp. lime juice

¼ tsp. salt

Directions:

  1. Preheat oven to 350F. Toss chickpeas in the ghee
  2. Pour the lime juice, paprika and salt on and toss again
  3. Place on a parchment lined pan and place into oven for 40-50 minutes or until crispy. Toss every 15 minutes
