Grapefruit Poppy Seed Muffins

It’s monday and it’s snowing and I rode my bike into campus…. let’s just say it was an eventful ride. But I really couldn’t be sad because I perfected my grapefruit poppy seed muffins!! It’s very hard to get grapefruit flavor into things guys so I had to add literally every part of the grapefruit haha but it works!! Hope your day has been better than mine but if it hasn’t you should make these and it will be better😬👌🏼

Grapefruit Poppy Seed Muffins

Makes 10 muffins


1½ cup almond flour

½ cup tapioca flour

½ tsp. cinnamon

½ cup grapefruit juice

1 tsp. grapefruit zest

¼ cup honey

1 tbsp. poppy seeds

½ tsp. baking soda


Topping optional:

Coconut butter

Grapefruit zest

1 drop grapefruit essential oil (must be food grade! We use Young Living)

Mix together and set aside



  1. Preheat oven to 350F
  2. In a medium bowl, mix together the almond flour, tapioca flour and cinnamon
  3. In a small bowl, combine grapefruit juice, zest and honey. Stir well, until combined
  4. Add the wet to the dry and mix. Add the poppy seeds and baking soda and mix
  5. Pour evenly into 10 muffin liners. Place into oven for 20-25 minutes

  1. I tried these muffins and they were AH-MAZING! I found that they were delightful just by themselves, but I think that they would be even more decadent with the topping you suggested. Thanks for posting. Love your posts and creativity. 🙂
