So yesterday in class we talked about the Microbiota and all the good bacteria that lives on and inside our body! Something really interesting my teacher shared was a study about how they took two different people groups: Southern Africans and African Americans, and switched their diets. So for two week the Southern Africans, which usually eat high fiber and high fat diets, ate a standard American diet and the African Americans ate the high fiber and high fat diet. They tested for this one type of bacteria that is connected to preventing colon cancer both before they started the diet and after the two weeks was up. The sourthern Africans bacteria significantly decreased in just two weeks because they were eating highly processed foods while the African Americans showed an increase in this bacteria!! Two weeks!! That’s crazy! Just goes to show that what you eat is so important to overall health! I am gonna try to find that study too and I will link it in this post!!
Now for the recipe!! Citrus season is one good thing about winter haha and this grapefruit dressing is super fresh and awesome on greens or used as a dipping sauce for broccoli and cauliflower! It’s a good dressing to shake things up👍🏼
Juice from 1 small grapefruit (little more than ½ cup)
¼ cup tahini
¼ tsp. cinnamon
¼ tsp. salt
