SWISS CHARD!! This is such an easy vegetable to throw into soups, use as wraps or chop into a salad! And be sure to get the rainbow kind because its so pretty!
- Vitamin K – swiss chard is one of the vegetables very high in vitamin K which is something important to bone growth and development! Its not all about calcium (but actually swiss chard contains a good amount of calcium too! So your bones will be very strong hah👍🏼)
- Diabetes – Swiss chard is actually the best vegetable to eat if you have pre-diabetes, diabetes or just problems with your blood sugar. There’s a flavonoid in Swiss chard that inhibits an enzyme called alpha-glucosidase which breaks down carbs into simple sugar. This means that you will have less simple sugars floating in your blood and therefore, a more stable blood sugar! (1)
- Magnesium – This is a nutrient that most people are deficient in. And Swiss chard contains 38% of your daily magnesium needs for every one-cup serving!!! This can help regulate stress hormones are it also helps with sleep
- Brain health – Swiss chard contains an antioxidant called betalain which can provide protection against certain oxidative stress-related disorders, which includes neuro-degenerative diseases.
