Indian Eggplant

So last week I had this really good mashed eggplant at an Indian restaurant and I wanted to recreate it! This is what I got so far and it turned out pretty good! I think this recipe will be an ongoing project though haha😬 I will post updates on this post too! But anyway it’s monday and you’ll probably need some meal prep for the week so why not try this out! It’s pretty simple and good way to add some more flavor to your meals!

Indian Mashed Eggplant


2 medium eggplants

1 onion

1 clove garlic

1 tsp. turmeric

2 tsp. garam masala

½ tsp. chili powder

1 tsp. salt

1 tbsp. lemon juice

1 tbsp. ghee



  1. Cut the eggplants in half both ways. Add them to a baking tray and brush them with ghee
  2. Wrap the onion and garlic in tin foil and add it to the tray. Place into 350F oven for 40 min – 1 hour or until eggplant is soft
  3. Once done, peel the skin off the eggplant (you don’t have to peel it all off, try to get most off though. It should come off easy!)
  4. Add eggplant, onion and garlic into a large food processor. Pulse a few times
  5. Add the spices, lemon juice and ghee. Pulse until mostly smooth with some chunks
