Apple Cinnamon Squash

Whew! That was a fun weekend of travel but I was so happy to get back to my own bed and getting back to routine👍🏼 Squash is one of my favorite things right now! It’s warm and soft and perfect because it’s currently 12F here😅 for this recipe I combined squash, apple, cinnamon and ginger to create a slighly sweet, cinnamon flavor that just helps warm you up!

Apple Cinnamon Buttercup Squash 


1 small buttercup squash

1 apple

1 tsp. cinnamon

½ tsp. ginger, ground

¼ tsp. salt

½ tbsp. ghee

1 tbsp honey (optional if you want it sweeter)


  1. Cut the buttercup squash in half then in wedges. Remove and discard the insides
  2. Preheat oven to 400F
  3. Slice the apple and add to the blender along with the cinnamon, ginger and salt and blend until smooth
  4. Rub the ghee into the buttercup squash wedges
  5. Spoon the apple mixture onto the squash and spread to the sides keeping most in the middle
  6. Put the squash onto a parchment-lined pan with the skin facing down, sprinkle with salt
  7. Put the squash into the oven for 45 minutes to one hour or until tender
