Pumpkin Pie Bites

Yea we found a lot of pumpkin puree in the freezer from fall haha so we’ve been trying to use it up! And it’s time to go back to school😭…. as you read this I will probably be sitting in class… sad… BUT I’ll be eating these little pumpkin pie bites so it hopefully won’t be too bad😉

Back to School Bites


8-10 dates

¼ cup pumpkin puree

¼ cup pumpkin seeds

¼ tsp. cinnamon

1/8 tsp. nutmeg

pinch of ground cloves

1 tbsp. water



  1. Add the pumpkin seeds to a food processor. Pulse a few times
  2. Add dates, pulse until it forms a ball
  3. Add the pumpkin puree, cinnamon, nutmeg and cloves. Pulse until smooth
  4. Form into 20 balls and place on a parchment lined pan, let set in the fridge for 2 hours
  5. Once firm, you can put them into a container and store in fridge
