FUDGE

Adding onto my sweet potato as dessert theme with this sweet potato fudge haha🤗! Since 2018 is 12 hours away you still have time to whip these up and share with friends and family while you welcome the new year! If fudge isn’t your think, I made buckeyes in the last post which are BOMB! So take this day to make yummy food and to reflect on 2017 and plan for 2018!! Happy New Years Eve!!!🎉

Sweet Potato Freezer Fudge

Ingredients:

🍵Matcha:

1 cup sweet potato, cooked (I would use the white sweet potato if you can find it, or your fudge will probably have a weird looking color)

1 tbsp. maple syrup

2 tbsp. milk

2 tsp. matcha powder

 

🍫Chocolate:

1 cup sweet potato, cooked

1-2 tbsp. maple syrup

2 tbsp. milk

2 tbsp. cacao powder

 

Directions:

  1. Add the sweet potato to a food processor and pulse a few times. Add the maple syrup, milk and then cacao powder or matcha powder. Pulse until smooth
  2. Pour into a parchment-lined pan and spread out until about 1 inch thick. Place into the freezer for 2-4 hours or until its not sticky on top.
  3. Cut it into slices and place back into freezer until ready to serve
  4. When ready, make sure to take out of the freezer for at least 10 minutes before serving.
