Buckwheat Monkey Bread

So I’ve been experimenting with buckwheat lately. A lot of grains make me bloated or just make me feel low energy. I wanted to see if buckwheat worked for me so I soaked about 1/4 cup of buckwheat groats overnight and ate them for breakfast. Buckwheat is a great type of grain for many people because it is naturally gluten free, easily digestible and is one of the highest grains in phytaste. Phytase is an enzyme that breaks down phytic acid. Phytic acid impairs the absorption of some minerals like iron and calcium. This is important because too much phytic acid can lead to nutrient deficiency! So even though buckwheat has phytic acid in it, it also has phytase so the phytic acid level overall is minimal if its prepared correctly. If you don’t have grains in your diet I suggest giving buckwheat a try but I would suggest fermenting or soaking it first. Heres a great recipe from Chris Kresser for fermented buckwheat pancakes!! I also just want to say that buying whole buckwheat groats is much better than buying the flour. The grain will lose phytase and nutrients in the milling process at a factory so its much better to grind what you need at home. Buckwheat Brownie Pull-Apart Bread

Ingredients:

2 cups buckwheat flour

¼ cup chia seeds, ground

½ cup honey

½ cup cacao powder

1 tsp. cinnamon

1 + 2 tbsp cup milk of choice

Coating:

8 dates, soaked in warm water for 10 minutes

 

Directions:

  1. Preheat oven to 350
  2. In a medium sized bowl, add honey, 1 cup of the milk and chia seeds. Mix and set aside
  3. In another bowl, add the flour, cacao powder and cinnamon. Mix well then add to the wet ingredients. Use 2 tbsp of milk if needed. (The mixture might not be sweet but buckwheat gets less bitter once baked, that being said add more honey if you want). Let sit for 10 minutes
  4. Blend the dates with 1/2 cup of the water from the dates and pour into a bowl
  5. Grease a loaf pan. Make balls with the dough and dunk them in the date mixture. Place them on top of each other until you cover the whole loaf and the mixture is gone. You can add any extra date mixture to the top
  6. Place into oven for 40-45 minutes or until a toothpick comes out clean (be aware that the date mixture will stay moist)
