Ginger Muffins

It’s been very snowy lately🙃 Yesterday I was walking to class and I only almost fell twice so we’re all good!😂 I have one more exam!!!!! So excited to be done for a little while! (I can make recipes all day now😉)

Today I have a recipe for gingerbread muffins!! I might try a different flour with these and let you know how it goes! But these really did hit the gingerbread spot👌🏼 (and yes I totally use snow as my background!)

Gingerbread Muffins


¼-½ cup maple syrup

¼ cup molasses

1 ¼ tsp. ginger

2 tsp. cinnamon

¼ tsp. cloves

1 tsp. vanilla

2 cups gluten free flour blend

1 tbsp. chia seeds, ground

pinch of salt

6 dates, soaked in ½ cup warm water for 10 minutes

1 ½ cup milk + 2 tbsp (any kind)


  1. Preheat oven to 350
  2. Mix together maple syrup, molasses and 1 ½ cups milk. Add chia seeds and stir
  3. In another bowl, mix together the flour, ginger, cinnamon, cloves and salt
  4. Mix dry ingredients into wet and stir to combined. Add 2 tbsp milk if needed
  5. Blend together the dates and water
  6. Line a 12-muffin tin. Fill about half way up with batter, add the date mixture into the middle, then add more batter onto the top. You can stir the dates gently with a toothpick or spoon.
  7. Put into the oven for 25 minutes or until a toothpick comes out clean (the date mixture will stay wet though)
