It’s EXAM week!😅 I just keep thinking about how happy I will be next week haha! That is my motivation to get through this week👍🏼 But I did get a chance to make some root vegetables this weekend in between some studying😉 These are actually so good and a perfect way to transform some winter veggies. I added turmeric to the sauce to make it a warm and cozy side dish with some anti-inflammatory properties (because my stress level is high🙃)
Winter Root Vegetables with Turmeric Tahini Sauce
Ingredients:
2 red beets
1 turnip
salt and pepper
Sauce:
¼ cup tahini
¼ cup water
1 tbsp. apple cider vinegar or lemon juice
¼ tsp. turmeric
¼ tsp. salt
Directions:
- Slice beets and turnips into rectangles.
- Mix together all sauce ingredients
- Add 1-2 tbsp. sauce to the chopped vegetables and stir. Add salt and pepper to taste
- Bake at 350F for 20 minutes, stir then back for another 20 minutes or until tender
- Let cool slightly, add vegetables to a bowl and mix in the rest of the sauce
