It’s EXAM week!😅 I just keep thinking about how happy I will be next week haha! That is my motivation to get through this week👍🏼 But I did get a chance to make some root vegetables this weekend in between some studying😉 These are actually so good and a perfect way to transform some winter veggies. I added turmeric to the sauce to make it a warm and cozy side dish with some anti-inflammatory properties (because my stress level is high🙃)

Winter Root Vegetables with Turmeric Tahini Sauce

Ingredients:

2 red beets

1 turnip

salt and pepper

Sauce:

¼ cup tahini

¼ cup water

1 tbsp. apple cider vinegar or lemon juice

¼ tsp. turmeric

¼ tsp. salt

 

Directions:

  1. Slice beets and turnips into rectangles.
  2. Mix together all sauce ingredients
  3. Add 1-2 tbsp. sauce to the chopped vegetables and stir. Add salt and pepper to taste
  4. Bake at 350F for 20 minutes, stir then back for another 20 minutes or until tender
  5. Let cool slightly, add vegetables to a bowl and mix in the rest of the sauce
