Happy December!! December is such a great month because school is almost out and family is around and there’s a lot of good food (especially in my family😜) So what are your month intentions? I think this month I want to focus on how my body feels. I think sometimes we just go with the flow and not actually realize that we feel terrible🙃 I want to be mindful about how I feel after I workout, after I sit for a long time, after I eat a large meal, after I eat a snack. All the things you know hah! And I definitely know that my body really liked this tapioca pudding😉 flavored with cranberry and orange! It’s refreshing but still tastes like Christmas❤️💚
Cranberry Orange Tapioca Pudding
Ingredients:
1/3 cup small tapioca pearls (we got ours from Bob Red’s Mill)
¾ cup water
1 cup milk of choice (almond works well)
½ cup orange juice
¼ tsp. cinnamon
½ tsp. vanilla
a pinch of salt
¼ cup honey
1 cup cranberries
Directions:
- In a saucepan, soak tapioca pearls in the ¾ cup water for 10 minutes. No need to heat
- While that’s soaking add the cranberries to a food processor. Pulse a few times to break them into smaller pieces. Add the honey and pulse a few more times
- Once soaked, add milk, orange juice, cinnamon, vanilla and salt. Heat for 10 minutes, stirring frequently
- Once the mixture has thickened, add the cranberry mixture and stir to combine
- Turn off the heat and put the mixture in a air tight container to set in the fridge for about an hour
