Leftovers!

Got leftover mashed potatoes??? My dad would always make potato cakes so it’s not like we’re just reheating mashed potatoes over and over again🙃 This is a great way to make something new and tasty! And you can make them however you like! Here’s what I did
Potato Cakes
1 cup potatoes
1/2 cup arugula
1/2 tsp salt
1/4 tsp pepper
1/4 tsp smoked paprika
Couple tbsp milk of choice
Ghee
1. Mash potatoes with the milk to make them smooth and creamy again
2. Add the seasoning and stir to combine then add the arugula or any type of green
3. Warm a griddle and add some ghee
4. Form mashed potatoes into cakes and cook 3-5 minutes on each side
This might be easier to bake them actually! Just put the formed cakes onto a parchment lined pan and bake at 350 for like 10-20 minutes maybe! If you choose to bake I would add the ghee or any oil to the actual mashed potatoes before you form them👍🏼👍🏼 Happy Leftovers!
