Need to bring a salad this week? We got you covered!! This salad is so delicious and so much better than a raw salad! This makes it easier to chew and digest and it just tastes better haha so a win-win 🙂 The pears make the dressing slightly sweet without having to add honey or maple syrup (which you can if you prefer). And this salad uses all the fall/winter things pomegranates (can use dries cranberries too!), sweet potato and walnuts!
Warm Kale Salad with Pear Dressing (print here)
Ingredients:
4 cups kale, thinly chopped
½ cup pomegranates
½ cup walnuts (optional)
2 sweet potatoes, spiralized or diced
1-2 tbsp. ghee
lemon juice
Dressing:
2 small pears, skinned
¼ cup apple cider vinegar
¼ cup olive oil
1 tsp. Dijon mustard
salt and pepper to taste
Directions:
- Add the pears, apple cider vinegar, olive oil, mustard, salt and pepper to a blender or food processor. Blend until smooth
- Spirlize the potato (or dice but you might want to cook it for 20 minutes then dice it so that it cooks in less time and is easier to cut). Add to a parchment-lined pan with some ghee. Add the walnuts to one side of the pan and bake on 350 for 10 minutes
- While that’s baking add ghee to a saucepan and cook the kale down until fully cooked. Add some lemon juice to help it wilt
- In a bowl, mix the kale, sweet potato, walnuts and pomegranates together. Add the dressing and toss to combine
