Gingerbread Time

This has been a lonnnggg week! And a fun weekend of traveling around Chicago but let me tell ya, I am EXHAUSTED! This week greets me with a huge test on Tuesday🙃 so a super simple and easy recipe that I can just eat and go was in order😉 and since it’s christmas time I had to make it gingerbread flavored right! Wish me luck this week because I’m gonna need it😜

Ginger Bread Chia Pudding

Makes 3-5 servings

Ingredients:

1 ¾ cups almond or coconut milk

3-5 dates, soaked in warm water for 1 minutes

½ tbsp. blackstrap molasses

½ tsp. cinnamon

¼ tsp. ginger

1/8 tsp. cloves

6 tbsp. chia seeds

 

Directions:

  1. Blend together milk, dates, molasses, cinnamon, ginger and cloves until well combined and dates are blended completely
  2. Pour into storage container. Add chia seeds one tablespoon at a time
  3. Stir every 3 minutes for 9 minutes. Place into the fridge to set overnight
