Carrot Fries

Happy Sunday!! Have you ever roasted cranberries with your veggies? Cuz you have to try it!!! They give a very subtle sweetness and tartness. And they are in season right now so finding fresh won’t be hard☺️

Carrot Fries (print here)


1 cup fresh cranberries

5 large carrots or a bag of baby carrots

½ tsp. cinnamon

¼ tsp. ginger

1 tbsp. ghee, melted

salt to taste

topped with fennel frongs



  1. Chop carrots in halves then halves again so its like a fry shape
  2. In a medium sized bowl, combine carrots, cranberries and ghee and toss until combined
  3. Add cinnamon and ginger then toss again
  4. Add to a parchment lined pan, add more cinnamon on top and salt to taste
  5. Put into 350F oven for 20-25 minutes
