Delicata Squash

Here’s a simple recipe delicata squash and tahini because both of those things are my FAV!👌🏼 You can use the tahini as a dip or sauce and these are even good cold so they are super good in lunches!!

Tahini Delicata Squash 


3 small delicata squashes

¼ cup tahini

½ cup water*

2 tbsp. lemon juice

¼ tsp. cayenne powder

¼ tsp. salt


  1. Preheat oven to 400F. Halve the squash lengthwise and remove seeds. Then cut the halves into ½ inch thick slices
  2. In a large bowl, add tahini, water, lemon juice, cayenne powder and salt and mix well
  3. Dip each half into the sauce and put onto a parchment lined baking sheet or just use it as a sauce after baking
  4. Bake for 20-30 minutes or until tender. Drizzle over the leftover sauce and enjoy!


*If using as a sauce use less water
