Today were sharing a new dinner to add to the rotation! It’s definitely a more time consuming meal but it is so fun! I would say it’s totally worth it! A perfect weekend meal!
Pesto Zucchini Roll Ups (print here)
Makes 13x9in pan
Ingredients:
2 medium zucchinis
1 small onion, diced
1 cup kale, thinly sliced
1 cup spinach
1 pounds ground beef
3/4 cup of your fav pesto
1 tbsp. ghee
salt to taste
Tomato Topping:
1 can tomato paste (6 oz)
1 can diced tomatoes
1 tsp. mint
1 tsp. Italian seasoning
Optional: Shredded cheese
Directions:
- Slice zucchinis into strips (we used a mandolin but I think you could use a y-shaped vegetable peeler).
- Cook the ground beef and set aside
- In a large saucepan, add the ghee and onions. Cook until browned. Add the kale and spinach to wilt. Add the meat back into the mixture
- Add the pesto and stir to completely coat, then add salt to taste if needed and set mixture aside
- Mix together the tomato paste, diced tomatoes, mint and Italian seasoning
- Place three zucchini strips so that they slightly overlap. Put about ¼ cup of the mixture onto the strips and roll them up. Place them seem down in the pan. Repeat until all zucchini is used
- If you have extra meat mixture pour on top. Then plop the tomato mixture on top and spread with the back of a spoon
- Place into a 350 degree oven for 45 minutes
