It’s squash time!! So today were talking about acorn squash!

  1. VITAMIN C- High in Vitamin C which keeps sickness at bay which is very important this time of year!
  2. POTASSIUM- Acorn squash is actually one of the highest foods in potassium. One cup gives you 26% of your DRV. Potassium is good for a lot of things but one of those things is it helps maintain normal blood pressure (1)
  3. FIBER- One cup gives you 9 grams of fiber!
  4. MINERALS- Acorn squash contains a lot of different minerals such as calcium, manganese, magnesium, copper and iron! This are all important in bone formation and other important processes in your body
