Shredded Pork in Instant Pot
Ingredients:
3 lbs. pork tenderloin, cut into 4 pieces
2 tbsp. olive oil or ghee
3 tsp. paprika
1 ½ tsp. coarse salt
1 tsp. cumin
½ tsp. cayenne pepper
1 can green chilies (7oz)
1 onion, cut into thin wedges
2 cloves garlic
½ cup chicken bone broth
Directions:
- In a small dish, combine all spices
- Press the sauté option on the Instant Pot to preheat. When hot add the pork, 2 pieces at a time, to brown each side
- Remove to a plate and deglaze the cooker with the broth
- Place meat back into cooker and add spices, onion, garlic and chilies
- Cover and make sure the valve is closed. Press Manuel and adjust to high pressure for 60 minutes
- Use the slow release option, when valve drops carefully remove lid
- Shred meat using a meat fork
- Serve immediately on peppers, tortillas (preferably grain-free), potatoes, or on top of some greens!
