Instant Pot Recipe!

Now for that meat inside the shell! This is a delicious and easy recipe to make any night taco night! Just add our plantain shells or eat it on top of greens🥗

Shredded Pork in Instant Pot


3 lbs. pork tenderloin, cut into 4 pieces

2 tbsp. olive oil or ghee

3 tsp. paprika

1 ½ tsp. coarse salt

1 tsp. cumin

½ tsp. cayenne pepper

1 can green chilies (7oz)

1 onion, cut into thin wedges

2 cloves garlic

½ cup chicken bone broth



  1. In a small dish, combine all spices
  2. Press the sauté option on the Instant Pot to preheat. When hot add the pork, 2 pieces at a time, to brown each side
  3. Remove to a plate and deglaze the cooker with the broth
  4. Place meat back into cooker and add spices, onion, garlic and chilies
  5. Cover and make sure the valve is closed. Press Manuel and adjust to high pressure for 60 minutes
  6. Use the slow release option, when valve drops carefully remove lid
  7. Shred meat using a meat fork
  8. Serve immediately on peppers, tortillas (preferably grain-free), potatoes, or on top of some greens!
