Taco Tuesday is coming soon!! Need something to wrap your meal up with? Try these plantain tortillas! Only 3 ingredients and they are the perfect gluten-free, flourless soft taco shell👌🏼 And something to go in these tortillas coming on Wednesday!!!

Plantain Tortillas (print here)

Makes about 8 regular


2 large green plantains (make sure they are green)

½ cup tapioca flour

½ tsp. salt


  1. In a food processer, blend plantains and salt until smooth (no chunks)
  2. Add tapioca flour and stir until a think dough forms
  3. Warm a griddle to 250 degrees
  4. Spoon some onto the griddle and spread with a spatula into a thin circle. I tried to roll these out before putting them on the griddle but they would just break, so this way works a lot better. And make sure these are green plantains because they will not stick to the griddle but yellow ones will
  5. Cook for about 2-4 minutes on each side
