You can never have too many salads to change it up every week! And this one is asian inspired to keep things interesting 🙂
Jicama Salad with Thai Peanut Dressing (print here)
Ingredients:
¼ cup tahini
¼ cup peanut butter (could totally use almond butter if you wanted)
½ tsp. sesame oil
1 tbsp. rice vinegar
2 tbsp. lime juice
1 tsp. grated ginger
½ tbsp. chili paste
1 clove garlic, minced
1 tbsp. tamari or coconut aminos
1 medium jicama, cubed
3 carrots, grated
½ cup cilantro, sliced thin
Directions:
- Place all dressing ingredients into a mason jar. Shake well to combine
- In a medium sized bowl mix together jicama, carrots and cilantro. Pour dressing over top and enjoy!!
This looks, and sounds, incredible! I absolutely love Jicama!
