Yes this title is true. The. Best. EVER. Who even needs pasta anyway?? And it’s a perfect side dish for any summer meal! And you’ll for sure impress all your friends and family when you bring this over to a barbecue 🙂
Lemon Butter Sauce with Zoodles (print here)
Ingredients:
¼ cup lemon juice
½ tsp. salt
¼ tsp. pepper
1 tsp. oregano, dried
1 tsp. basil, dried
¼ cup chicken bone broth
1 stick Kerrygold butter, cut into 8 pieces and chilled
2 tbsp capers if desired
Directions:
- In a saucepan, combine all ingredients except butter, and let it come to a boil
- Add butter and whisk until creamy, add capers
- Pour over already prepared zoodles or other roasted veggies
The best way to make zoodles
Toss with a drizzle of olive oil and roast in the oven at 400 degrees for about 10-15 minutes
