Sick of chia pudding yet? Haha if you are I have the perfect solution! Tapioca pudding!! Its more like rice pudding than chia pudding is and its a perfect way to change things up. Plus you can experiment with so many flavors!! This recipe is just a simple cinnamon and vanilla flavor
Tapioca Pudding (Print here)
Ingredients:
½ medium Japanese sweet potato, about ½ cup (could use regular sweet potato)
1/3 cup tapioca pearls
¾ cup water
3 dates, soaked
½ cup milk of choice
1 tsp. vanilla
¼ tsp. salt
Directions:
- Soak dates in the ¾ cup water overnight or if the water is warm, about 2 hours
- Blend together until mixture is smooth, might have some small chunks but that it fine
- Bring the date mixture to a small boil and add the tapioca pearls. Cook for 5 minutes and then let sit for about 30-45 minutes or until tender
- Blend the milk, potato, salt and vanilla until smooth
- Add the mixture to the tapioca and stir
- Place into a storage container and cool in fridge until you are ready to enjoy it
