Red, White and Green

Wanna know how to make your Monday better? By making this for dinner!!!!!! Mom made this for a group of family and we served it on roasted cauliflower and rice. I LOVED having it for leftovers on salad or just by itself cause its just that good!

Green Beans with Onions and Tomatoes (print here)

Ingredients:

2 pounds snipped green beans

2 large onions, slivered

2 cloves garlic, minced

2 tbsp. olive oil

2 28oz cans diced tomatoes

1 28oz can crushed tomatoes

salt and pepper to taste

fresh lemon juice and parsley for garnish

Directions:

  1. Sauté onions in olive oil until they start to brown, add green beans and cook until slightly softened
  2. Add garlic and cook for another minute, then add all tomatoes and simmer for about 15 minutes
  3. Add salt and pepper to taste
  4. Serve on top of roasted vegetables, cauliflower rice or wild rice

This makes quite a bit so feel free to half this recipe. Could also add chicken or ground beef to make this a meal
