Wanna know how to make your Monday better? By making this for dinner!!!!!! Mom made this for a group of family and we served it on roasted cauliflower and rice. I LOVED having it for leftovers on salad or just by itself cause its just that good!
Green Beans with Onions and Tomatoes (print here)
Ingredients:
2 pounds snipped green beans
2 large onions, slivered
2 cloves garlic, minced
2 tbsp. olive oil
2 28oz cans diced tomatoes
1 28oz can crushed tomatoes
salt and pepper to taste
fresh lemon juice and parsley for garnish
Directions:
- Sauté onions in olive oil until they start to brown, add green beans and cook until slightly softened
- Add garlic and cook for another minute, then add all tomatoes and simmer for about 15 minutes
- Add salt and pepper to taste
- Serve on top of roasted vegetables, cauliflower rice or wild rice
This makes quite a bit so feel free to half this recipe. Could also add chicken or ground beef to make this a meal
